Salt and Vinegar Smashed Potatoes

For your salty carb fix!

Potatoes, Vegan, Plant based


Time to make – 50 minutes Serves 4

Ingredients 500g of new potatoes – halved 5 tablespoons of apple cider vinegar 3 tablespoons of olive oil Sea salt Pepper


Method:


  • Pre-heat the oven to 225C

  • Mix the potatoes with a good drizzle of olive oil, the ACV and the salt – mix well

  • Cook for 30 minutes

  • Remove from the oven and crush eat potato with a fork

  • Add another drizzle and ACV and salt and then cook for another 10 minutes to crisp up

  • Serve
