Recipe, plant based, vegan

Veggie Taco’s - Vegan Time to make – 15 minutes Serves 4

  • Ingredients 1 red onion 2 garlic cloves 400g tin of chopped tomato’s 1 tin of black beans 2 table spoons of tomato puree 1 tablespoon of maple syrup Teaspoon of smoked paprika ½ teaspoon of cumin 12 taco shells 100g salsa Pre heat the oven to 180C Chop up the onion and garlic Cook them together on a medium heat in a well-oiled fry pan until soft Add the spices and tomato puree After 5 minutes add the drained beans, maple syrup and season with salt and pepper Bring to boil then reduce for 10 minutes Warm the taco shells up as instructed on the packet Add the salsa to the taco’s and filling with the bean mix Serve up


Serving suggestion – add guacamole
